I gotta ask... the show gets really choppy. Is that my end with the site on my nice new awesome ass computer? Or is it from the simming/encoding side?

It's one of two things or even both: 1) It's the video itself. The match-simulator's computer can't handle the quality of the capture device. I can tell from the shows that the matches were recorded beforehand, thus the caster is casting the already pre-recorded video. 2) The caster isn't aware of his/her internet's upload speed. A good way to test is using this website: www.speedtest.net/, and seeing where their upload potential is tested at. Once they figure that out, they can adjust the settings on their broadcasting software to fit within the limit. For example, my upload speed is 0.75 mb/s. So, using XSplit (the broadcaster software I use), I set my stream's upload to 600 kb/s, which is roughly .60 mb/s. It's within the limit of my upload, so my video quality looks like this: Nice and smooth. ^_^

I've noticed it has seemed worse these past couple of weeks. I will try setting the resolution of my Xbox 360 back to 480p from 720P, and change the resolution of X-Split from 720p to 854 x 480/480p FWVGA(16:9). Not sure how to set my stream's upload though.

Well, my XSplit resolution is just set to default. Nothing really too fancy. I can't broadcast in HD, I don't have the equipment for that, so it's just standard (480p I believe?) with the 360 set to widescreen video output. It may be different for me though, since I don't cast pre-recorded video. I cast a direct live-feed from the game itself.

I have aped your settings as shown above, for the first time testing the bandwidth has resulted in a green symbol and saying that my bandwidth is sufficient. The Xbox 360's display settings is 720p, Widescreen, Component (HD). X-Split's resolution, selected from the view part of the main "File, View, Broadcast, Announce" toolbar, is set to 720p (HDTV). But I now have a little yellow "90%" on the side of my X-Split window, which is related to scale viewport, whatever that is.

Don't worry about the scale view port. Some of my friends do "test casts" to see how their stream looks, so I would recommend doing that to make any adjustments you feel need to be made. That way you're up and ready by the time the next show rolls around.
